This table travels the country to serve meals made from local plants and natural resources that will become threatened or extinct over the next 20-40 years due to the changing climate. Its focus is to directly translate the research of the world’s top climate scientists into a culinary and contemplative experience. Designed in collaboration with 20 scientists based in Boulder and three local chefs, the menu changes its diverse offerings as ecosystems become increasingly disturbed.
